The Islay distillery Bunnahabahain is expected to release a 20 year old?whisky, where the whisky has matured for 2 years in Palo Cortado casks. Palo Cortado is the rarest type of sherry. By tradition, it should be like an?Amontillado on the nose and taste like an Oloroso. The colour is like an Oloroso, chestnut to mahogany. Also by tradition, a true Palo Cortado is only to be made by accident when the sherry destined to become a flor or Amontillado starts oxidatively as an Oloroso.
However, today it is possible to find sherry under the Palo Cortado name that has simply been produced by mixing Amaontillado and Oloroso sherries.
Whisky having matured in Palo Cortado casks is rare. Through the years we have seen Palo Cortado finishes from among others, Craigellachie and Glengoyne. Deanston also released a 12 year old Distillery Exclusive being a Palo Cartado finish earlier this year.
